Ingredients
1.5 kg cod fillet
500 g Durum flour
Oil
3 ripe mangos
4 red onions
oil
1.5 dl white wine
Lemon juice
A little sugar
Salt and pepper
1 large bunch of dill
300 g butter
Cooking instructions
Roll the fish in the Durum flour and fry in a small amount of oil in a frying pan. Season with salt and pepper.
Mango compote:
Dice the mango and finely chop the onion. Brown lightly in a little oil. Add the white wine, lemon juice, and a little sugar, salt and pepper. Boil until cooked down to a thick compote.
Black butter:
Brown the butter in a saucepan. Leave to cool and add the dill.
