Royal Greenland's range of seafood consists of selected species from the North Atlantic, that share a consistency in high quality, but differ in terms of flavours and use. Here is a short guide for a few highlighted species, that are particularly well suited for serving on cruise ships

Greenland halibut

Greenland halibut is a very easy fish to cook with because it is almost impossible to overcook. Once cooked, the meat is snow white, soft and tender with a very low risk of bones. The flavour is mild and easy to pair with herbs and spices for ample serving options. Greenland halibut has a long service life, as the quality of the cooked fillet remains for a long time, making it well suited even for buffets.

Greenlandic coldwater prawns

Coldwater prawns from Greenland is a wellknown species, especially by British and Scandivanian guests. All our coldwater prawns are MSC certified and wild caught in the waters west of Greenland. The flavour is mild and sweet with a juicy texture. Prawns offer a lot of classic recipes for the menu like prawn cocktails and needs almost no prep time, as they are already cooked.

Nutaaq cod (Atlantic cod) 

Nutaaq means 'new' in Greenlandic and signifies a unique processing system, that seals in the flavour and texture of a freshly caught fish. The result of this is an all natural white, almost translusent fillet, that goes from live fish to frozen fillet in less than 3 hours. The fast processing ensures that all moisture is preserved, until the fillets are defrosted and ready for use in a professional kitchen. The flavour is sweet and mild, and the meat flakes beautifully when cooked.

Smoked fish

Royal Greenland offers smoked salmon and Greenland halibut with world-class food safety. We only use the highest quality of raw material for our hot - and cold smoked products. Each fillet is smoked gently over beech wood for a balanced smoke flavour and texture. Each product is carefully processed according to our model for zero listeria growth in order to quarantee a safe product.
