Ingredients
250 g red lumpfish roe
500 ml whole milk
50 ml beer
3 eggs
250 g plain flour
1 tbsp sugar
400 g cottage cheese
100 g firm cheese
½ teaspoon dried nutmeg
½ teaspoon celery salt
10 stalks of cicely or chervil
Salt and white pepper
Butter (for frying the pancakes)
Cooking instructions
Whisk together the milk, beer, eggs, flour, sugar and a pinch of salt. Let the batter sit for at least 30 minutes in the fridge.
Stir the cottage cheese, finely-grated firm cheese, nutmeg, celery salt and 200 g of the lumpfish roe and season with salt and pepper to taste. Fry the batter into thin pancakes in butter at an even heat for about 2 minutes on each side. Divide up the cottage cheese mixture onto the pancakes and then roll them up and warm them in the oven for 2-3 minutes.
Serve immediately with the remaining fish roe and plucked cicely.
