Soy marinated haddock with beans and sautéed peas

Ingredients

10 haddock loins (defrosted) 
1 dl soy sauce
50 g fresh ginger
2 kg of tinned mixed beans
600 g frozen peas
600 g French beans
1/2 dl sesame oil
2 red onions
10 sprigs of broad leaf parsley
1 red pepper
5 cloves of garlic
1 untreated lemon
Salt and white pepper

Tip

Take care not to oversalt the fish, as the Soy sauce is already very salty.

Cooking instructions

Chop the ginger into very thin slices or grate it, then sprinkle with boiling soy sauce. Pour this mixture on the fish fillets, and then put in the oven for approximately 30 minutes at 100°C (core temperature between 55 and 65°C).

Sauté the rinsed and drained beans in sesame oil with the peas, coarsely chopped French beans, finely-chopped red onions, finely chopped parsley, finely chopped chili pepper finely chopped, crushed garlic and finely grated lemon zest. Season with the lemon juice, then add salt and pepper.

Tip
