Ingredients
10 kg of cod or pollack
1 kg of leeks in strips
200 g onions, chopped
1.1 kg apples in thin wedges
5 l coconut milk
3 l water
40 kaffir lime leaves
Cornflour
Salt
260 ml curry powder
Oil
Mashed potato
15 kg potatoes
approx. 2 l milk
300 ml olive oil
Salt
Pepper
Nutmeg
Cooking instructions
Cut the fish into suitable sizes. Place them on a tray and arrange the strips of leek on top. Bake in the oven for about 10 minutes at 180 °C.
Fry the apples, onions and curry powder lightly in a little oil. Add the coconut milk, water and kaffir lime leaves. Bring to the boil, add cornflour and season with salt.
Boil the potatoes for the mash. Beat the boiled potatoes with milk and olive oil. Season with salt, pepper and nutmeg.
Serve the fish with the sauce and the mashed potato.
