Ingredients
50 oz snow crab clusters
5 iceberg lettuces
10 pasteurised egg yolks
0.6 cup olive oil
1 cup mayonnaise
0.2 cup lemon juice
5 tbsp Worcestershire sauce
1 cup finely grated parmesan cheese
4 cloves of garlic, finely grated or crushed
2 tbsp sweet mustard
Cling film
Salt and pepper, freshly ground
Cooking instructions
Thaw out the crabs for about 4 hours and rinse thoroughly in cold water. Cut the lettuce into quarters, pack individually in cling film and place in the freezer for 1-2 hours. Mix the egg yolks and oil together and add the remaining ingredients. Season with salt and pepper to taste. Cut open the crabs and warm slightly in the oven if desired. Unwrap the frozen lettuces and serve immediately with dressing, crabs and finger bowls.
